Futian Shangri-La, Shenzhen presents hairy crab delicacies from 15 October to 30 November 2016. Chef Dong has diligently prepared a set menu and an a-la-carte menu at Shang Garden for guests to choose from at Shang Garden.

Hairy crabs are an autumn delicacy in eastern China. They are prized for the crab roe, particularly, female, which ripen in the ninth lunar month, and in the tenth month for males. It is high time to savour the crustacean.

The hairy crab menu includes dishes such as the classic Steamed Hairy Crab and Braised Thick Bean Curd Soup with Crab Meat. Chef Dong has taken an innovative approach by presenting Stir-Fried Spicy Hairy Crab and Shrimp with Bean Curd with Prickly Ash. Braised Crab Roe and Sea Urchin served with Steamed Rice combines black rice, taro, Thai fragrant rice and rock rice from Nepal and drenched in soup boiled with sea urchin and crab roe. Braised Vegetable with Ham and Crab is cooked with river shrimp, scallop, ham and swamp eel, which makes the soup taste fresh and sweet. Pan-Fried Crab Meat with Mushroom and Egg is combined with seasonal ingredients and its appearance is as cute as a pomegranate.

The a la carte menu also includes Pan-Fried Bacon Roll with Crab, Braised Lion Head Meat Ball with Minced Pork, Crab Roe and Crab Meat, Steamed Soup Dumpling with Minced Pork and Crab Roe amongst others. Guests can also enjoy other flavours,

including Crab Meat with Avocado and Cabbage on a Charcoal Soft Roll, Pistachio and Almond Nougat Custard-filled Zeppole.

The hairy crab feast consists of three kinds of culinary styles, including Huaiyang, Cantonese and Chuan. The hotel also chooses seasonal and superior ingredients to guarantee freshness while adhering to the Shangri-La Food Safety Management System to ensure hygiene and safety.

The hairy crab comes from Changdang Lake, one of the top 10 lakes in Jiangsu Province, which belongs to the famous “Tai” Lake water system. The lake has the perfect environment for crabs. The crab has been authorised by the government as an organic aquatic product and an “A” grade green food product. The State Entry-Exit Inspection and Quarantine Bureau has authorised the exemption of customs clearance for Changdang Lake hairy crab, which is being supplied to the Hong Kong market for five years now. In 2008, Changdang Lake hairy crab was selected as one of the top 10 crabs in China. Since then, the lake has become famous in China and the world.

A la carte dishes start from RMB 32 and the set menu is priced at RMB 368 per person. All prices are subject to 10 percent service charge and prevailing government taxes and value-added tax payable on the prices together with the service charge.
