Since the appointment of Filippo Fondatori as Chef de Cuisine on the 8th April 2015, Caffe Mondo have adopted authentic Italian flavours. Caffe Mondo offers a selection of filling pizzas and pastas amongst other contemporary Italian cuisines, which are all created by Chef Filippo. Traditionally, Chef Filippo inherited his passion and talent in cooking from his grandmother. This fascination with a variety of Italian flavour brought Filippo to share his talents as he embarked on travelling at seventeen after spending several years in Italy learning his first culinary experiences within hotels and restaurants around the country.
Travelling across the region resulted in Chef Filippo working as one of two lead chefs that opened the Le Cirque in New Delhi at the Leela Palace Hotel and led the restaurant to numerous culinary awards. Working at Le Cirque and also a four year stint in the Dominican Republic would eventually lead to working in an international luxury resort in Sanya, where the now 32 year old Italian chef began his exploration within China.
Chef Filippo Fondatori has spoke about the Italian cuisine, “The essence of Italian food is simplicity”, Using the freshest ingredients, plus a little bit cooking techniques, will enhance the original taste, not to mention, do it with love.
”Caffe Mondo’s Chef Filippo has used his 15 years of working experience to design a new menu, which mixes Italian flavours with seafood. Italian flavoured seafood recommendations include Seafood Panzanella, Silver Cod Fish Filet, which are perfect for seafood-lovers and Chef’s recommendations are as follows, Fava Beans Ravioli, Veal Chop Milanese Style and Lemon Panna Cotta.
The seafood/Italian crossover creations come from Chef Filippo’s hometown of Tuscany, which is known for its artistic legacy.
